What Are Biscuits & Cookies?

Biscuits, (not to be confused with American biscuits, but rather the UK name for our version of cookies), is a tea-time classic and pretty much always paired with a tea, coffee or a cold glass of milk! Whatever name you know them by, they are here to stay and no doubt even more delicious ones to comes!


My Biscuits & Cookies

The following is a list of my biscuits and cookies, some my own recipes and some I have reviewed. I probably had near on 50 recipes on the old website, so please bear with me while I get them on here. I am updating the photos and recipes a little, as I have developed A LOT in the last 2 years, and hopefully your baking has too. So with that said, these things take time to get online. So I appreciate your patience.

TRADITIONAL SCOTTISH SHORTBREAD

This is my popular biscuit recipe, and not just because of it’s taste and texture, but because it is authentic and actually what us Scots actually make. So much better than the shop bought.

CHOCOLATE DIGESTIVES – A British Classic

This is my version of the classic British biscuit – Chocolate Digestives. Not too sweet and using porridge oats, (which is actually where the name originates from as it was intended for digestive purposes), my version has coconut added for an extra element.

Here’s my super simple, but easily customizable, Jam Sandwich Sugar Cookies. Perfect with raspberry jam and powdered sugar on top, these are easier to make than you think.

SEASONAL JAMMIE DODGERS – My Version Of The Classic British Biscuits

This is my take on British classic ‘shop bought’ biscuit/cookie Jammie Dodgers. Also known as Jammie Biscuits, they featured as a technical on Great British Bake Off (Great British Baking Show). My recipe however is thorough and with no time limit!

CHOCOLATE FILLED VANILLA SANDWICH COOKIES

This recipe was originally posted for Spring & Easter baking with the biscuits made using themed cutters. But you can also make square, rectangular or round sandwich cookies. These include my special buttercream filling that uses clarified butter to achieve a firmer set filling.

Chocolate & Coconut Scottish Shortbread is based on my traditional Scottish shortbread recipe, with a melt-in-the-mouth texture, just as we make them here in Scotland.

Another Easter/Spring themed bake that can be made any time of the year. These are my version of an orange flavoured filled Oreo! Make regular or Gluten Free!

Here’s my super simple beginner recipe for making double chocolate cookies. Originally developed as chunky & soft, you can also make thin and crispy. You can add whatever chocolate chips or nuts you would like.

Made with heart shaped cutters, my Red Velvet Oreo Style Sandwich Cookies are perfect for Valentine’s Day. Super simple to make and with less additives & preservatives than the shop bought cookie. Made with a clarified butter vanilla filling, that won’t squish out when you take a bite!

LEMON CURD OAT BARS

These Lemon Curd Oat Bars are my softer alternative to flapjacks. Super easy to make, these squares/bars, can also be made using apricot jam or Gluten Free flour.
